Now that I am older and have a family of my own, I realize a lot of my favorite foods were only made because we were poor. Do you have a similar story?

I stumbled across this post on Quora this morning, and it got me thinking about the "poop people" food I loved as a kid. I am one of FOUR kids, so we had a family of six total. I can't imagine trying to feed SIX people on a shoestring budget, but my mom and dad made it work.

My mom used to make this special toast for us on the weekend. She called it a "Saturday Morning Special," and it was basically a slice of cheap white bread with bologna and American cheese on top. She baked it in the oven for a few minutes, and we would devour it. We'd also have sliced spam... or random casseroles... or polish sausage and sauerkraut... and now I see these were all ways to stretch our food budget.

It may not have been gourmet food, but it was prepared with love. I realize now most chefs or bougie people would turn their noses up at what we ate, but I don't care. It was good to me.
